Triple Chocolate Cookies

I had my first assignment due this week which means... procrastibaking!!

I felt like such an adult: no late nights, or last minute runs to hand it in in time. It all went by relatively calmly. Which was great!

I did indulge in a little oh shit this actually counts sugar. I happily go off to classes and do some study with no problems, until I realise that my actual grade is determined by the work and all of a sudden it is the last thing I want to do. Baking manages to cover the required sugar hit and procrastination (or motivation?) all at once.

These cookies were great for it! They are chocolate and sweet, crispy on the edges and soft in the middle. I did overbake mine a little so I have reduced the cooking time by a couple of minutes. Just keep an eye on the oven and it'll be fine.


100g butter
1/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 1/2 cups flour
1 1/2 tsp baking powder
1/3 cup of white chocolate, chopped
1/3 cup of milk chocolate, chopped
1/3 cup of dark chocolate, chopped

Preheat oven to 180°C

Melt butter in a heat proof bowl. Stir in the brown and white sugar.
Beat in the eggs, one at a time.
Add the flour and baking powder to the bowl. Stir until about half of the flour is mixed in.
Add the chocolate chunks and stir until it is all combined.
Place balls of cookie dough onto a greased (or lined) tray.
Bake for 10-12 minutes, or until you can slide the cookies on the sheet.
Cool on a wire rack.
