Monkey Bread Porridge

Lately I have been loving very simple meals. Mainly back to basics and one pot wonders. I like to think that it is the weather making me reminisce about old comforts. In reality it is probably just because I am on both cooking and dishes at the moment...

I want to share with you one of my favourite breakfasts. Porridge is at its best on cold winter mornings as it warms you from the inside. This could be more appropriately named as Sweet Banana Porridge but it tastes like the Monkey bread my mum used to make for school lunches. 

After a steaming bowl of oats even your toes start to heat up!  Lately, I have been making a pot of porridge for L and I on weekend mornings so we can sit together and prepare for the day. 

I like adding extras to it. Today I added cinnamon (classic combo with banana) and sultanas which get lovely and juicy. Another favourite is adding peanut butter to give it that sweet-savoury kick. We even added some cocoa to it once and it was like having dessert for breakfast.

MONKEY BREAD PORRIDGE

PREP
2 ripe bananas
1/2 cup of oats
1 cup of milk or water (or a mix of the two)
pinch of salt
1/2 tsp cinnamon
1 handful of sultanas or raisins 

DO
Mash bananas with a fork until a paste like consistency. (Do this in your pot to save on dishes!)
Add the rest of the ingredients and place on a medium heat.
Stir constantly until thick (approx 5-7 minutes)
Serves two

I have been making this as a single serving in the microwave as well. I just half the ingredients and put it in the microwave for 90 seconds (and additional 30 second bouts if required). The banana doesn't melt in as nicely as it does in the pot but it is still yummy.
