Lemon and Oat Cookies (Vegan)

I appreciate any chance to get out my favourite tea cups or mugs. Even if it is a Sunday afternoon for a solo cup of tea. I picked up these ones from an antiques stall at the Ohope markets. What better chance to bring out my cups than some good tea-drinking cookies?!

These are vegan and gluten-free cookies (and dairy and egg free). These cookies are great for people with lots of dietary restrictions. And you probably have most of the ingredients already.

Well, they are gluten free-ish. Some people who are celiac do not eat oats as they are often produced on the same line as wheat. If the person you are making this for would prefer, replace the oats with ground almonds and they should work fine! You will just have to rename them lemon and almond cookies.


3 cups of oats (or ground almonds)
1/2 cup brown sugar
1/2 tsp baking powder
1/4 cup coconut oil (or any flavourless oil)
1/2 cup applesauce
juice and rind of one lemon

Preheat oven to 170°C

Place oats in a food processor and pulse until it is a fine powder.
Combine all ingredients in a bowl.
Cover and place in the fridge for 20 minutes.
Roll into 3/4 inch sized balls and squish down with a fork.
Bake at 170°C for 7-10 minutes. Cool on a wire rack.

I make my own applesauce by peeling and chopping up two apples and leaving to simmer in a saucepan with 1 tsp of sugar and 4 Tbsp water. Once cooked and soft, I blitz it with a stick blender and a little extra water if required. I find 2 apples makes about 1/2 a cup of applesauce.
