These are stress cookies. Like god this afternoon is going to be so tense cookies. Or thank god the week is over now where is the wine cookies. They are all gooey chocolate and crunchy almonds and sweet honey. It is like a yoga class for your stomach.
I used mānuka honey which gives a deep flavour. It probably loses some of its almost-a-superfood status when baked but hey, we'll claim it! You can swap out the brown sugar for muscovado or coconut sugar and it works just as well.
You should make these because:
it is good for you (the honey, right?)
they sound just a little bit fancy for gifting to people
its really easy
HONEYED ALMOND AND DARK CHOCOLATE COOKIES
1-2 Tbsp honey
1/2 cup almonds
125g butter, melted
1/2 cup brown sugar
1 1/2 cups flour
1 tsp baking powder
1/2 cup dark chocolate chunks
Preheat oven to 180°c
Line or grease two baking trays
Combine honey and almonds in a bowl. Spread in a single layer and bake for 10-15 minutes, or until golden.
While the almonds cool, combine the melted butter, sugar and egg.
Mix in the flour and baking powder, making sure to leave no lumps.
Chop up the almonds roughly. You made need to pull them apart with your fingers.
Stir the chocolate and chopped almonds through the cookie dough.
Spoon onto a lined tray and bake for 7-10 minutes or until golden.
