Funfetti Cupcakes

Do you know what is funner than fun? Funfetti

I love sprinkles and glitter and confetti. These have two of those things. Oh man,  they could have been even better if I had used glittery edible confetti... I guess that can be next time.

I made these for a DnD session to feed some hungry nerds. They went down a treat. These are vanilla cupcakes filled with sprinkles and topped with vanilla buttercream and even more sprinkles. I would definitely recommend using confetti rather than 100’s and 1000’s. I used these mini neon ones inside the cupcakes and these bigger confetti for decorating.

I am loving Italian meringue buttercream. It is so smooth and creamy and not too sweet. And everytime I make it I find it a little bit easier. You should definitely give it a go!


2 1/2 cups flour
1 cup white sugar
1 cup brown sugar
1 tsp baking soda
2 eggs
225g butter, melted
2/3 cup plain yoghurt
1/3 cup milk
1 Tbsp vinegar
2 tsp vanilla
Oodles and oodles of sugar confetti

Line a cupcake tray with cupcake cases
Preheat oven to 180°C 

Whisk dry ingredients together (flour, sugars and baking soda).
Whisk wet ingredients together (eggs, butter, yoghurt, milk, vinegar and vanilla).
Fold the wet ingredients into the dry ingredients. When it is almost combined, sprinkle over your confetti and fold in.
Spoon into cupcake cases (18 regular, 15 jumbo). Bake at 180°C for 20-25 minutes, or until the tops are golden and a toothpick inserted into the centre comes out clean.
Cool on a wire rack and ice with vanilla buttercream.
