Happy birthday to me! This past week was my birthday and between spending time with the family and watching Star Wars with L, I made a cake!
Is it weird to make your food decisions based on what is the most fun to make?
Maybe... but I do it all the time.
This cake has meringue, vanilla cake, whipped cream, and strawberries of course! From December first I just get this hankering for berries so I had to have them in my birthday cake.

ETON MESS CAKE
2/3 cup sugar
1 cup flour
3 Tbsp cornflour
1 tsp vanilla
1 tsp baking powder
6 Tbsp Milk
Grease and line two 7 inch cake pans
Preheat oven to 170°C
Separate out the egg yolks. Whip up the egg whites until it forms soft peaks.
Beat butter and sugar until light and fluffy. Add the egg yolks and vanilla, beating well to combine. Stir in the milk.
Sift over flour, cornflour and baking powder into a bowl. Alternate folding in the flour and egg whites until everything is just combined.
Split between the pans. Bake for 15-20 minutes, or until the top springs back to the touch.
Whip up the cream and mix half with the most of the strawberries and meringues.
On a serving plate, layer cake, cream meringue mix and more cake. Finish with a layer of plain whipped cream and a sprinkling of strawberries and meringue.
