Dark Chocolate and Ginger Biscotti

This past weekend was my dads birthday and we filled it with family time, kitten cuddles, and noisy boardgames.

He has this old person syndrome where he likes ginger (although he isn't old!). Given that no one else likes it we try to make him some things with crystallised ginger for birthdays and christmases. 

DARK CHOCOLATE AND GINGER BISCOTTI

PREP
1/2 cup oil
1 cup sugar
3 eggs
3 cups self raising flour
3/4 cup crystallised ginger, chopped
1/4 cup chopped dark chocolate

Extra dark choc and ginger for decorating
Preheat oven to 175°C

DO
Combine all ingredients in a bowl and shape into two logs.
Bake for 20 minutes. Allow to cool slightly.
Slice into 1/2 to 1 inch thick cookies.
Lie down on a baking tray. Bake for 5-7 minutes on each side.
Decorate with drizzled chocolate and extra ginger.
