Stress baking. I know I'm not the only person who does this but it feels almost silly sometimes.
I have some sick family members and I received an ambiguous message which I took to mean everything bad that could happen has happened and I immediately flew into a fluster of activity. I rushed to get my sewing machine out to finish mending my jeans, but no I should pack first. And then I did neither of those things and I stress baked. I didn't record the ingredients very well 'cause, if I'm going to be real honest, I thought I would just eat some batter with a spoon and then cry in the shower. After what seemed like an eternity but was actually only five minutes, I found out everything was okay and I was being a nervous Nelly over nothing, so here we are.
Cookies. With chocolate inside. Yum.
CHOCOLATE STUFFED PEANUT BUTTER COOKIES
This was all a bit thrown together so just adjust until it works for you
Cream together 100g butter and a 2 heaped dessert spoons of peanut butter. Add 1 cup of white sugar and continue to mix. Add in an egg and whip until all incorporated.
Add enough flour that it forms a dough (I think I used ~2 cups). Roll into balls and add a small square of chocolate in the center (I cut squares of Whittakers in half for each cookie).
Bake at 180°C for 8-12 minutes or until golden brown on top.
