I've been getting up early. When the city is still dark and quiet, and I feel like I have the whole world to myself.
As it gets into winter my watch the sunrise cup of tea is turning into a sit in the dark cup of tea. So I have started using my extra time for the forces of good... like muffins. Muffins that taste like chocolate chip cookie dough. Yum!
CHOCOLATE CHUNK MUFFINS
1 3/4 cups flour
1 1/2 tsp baking powder
1/2 cup sugar
1 cup milk
1/2 cup yoghurt
1 tsp vanilla extract
1 cup chopped chocolate
Prepare a muffin tray by greasing it with butter then dusting with flour.
Whisk together dry ingredients. Sprinkle chocolate over top.
Whisk together wet ingredients.
Fold wet and dry ingredients together. Be careful not to over mix.
Bake at 175°C for 14 minutes.
